No Bake Choc Chip Flapjack Bites
These no bake choc chip bites not only taste AMAZING, but they take all of 5 minutes to make and contain just 7 simple ingredients! At 70 calories per bite, they’re the perfect mid-morning snack or delicious pre-workout energy bite. Simply combine all ingredients together, flatten onto grease-proof paper and leave to set in the fridge and you are DONE!
Ingredients:
Makes 15 oat bites
- 30g organic honey 
- 60g porridge oats (these can be any type you like!) 
- 60g Crunchy Peanut Butter (For this I used Meridian - you can buy this in the huge tubs which are ideal for baking) 
- 1 scoop of vanilla protein powder (I always use MyProtein - it’s great value for money, is low in sugar and again so great for baking recipes) 
- 20g desiccated coconut 
- 1/2 teaspoon of vanilla extract 
- 25g dark chocolate chips - Note: You can choose whatever nut butter and you like and can sub the choc chips for dried fruit, extra nuts (or extra chocolate!) 
Method:
- Line a small, shallow baking tin or dish with parchment paper. 
- Pour all the ingredients into a bowl and combine. If you find they don’t stick together well enough, add a splash of almond milk or a drizzle more honey. 
- Flatten the mixture into your baking dish until its about 2cm deep. 
- Leave to set in the fridge for an hour. 
- Remove from the fridge and using a sharp knife cut into 15 bite-sized pieces. 
- Store in the fridge for up to 5 days.
